No shell boiled eggs (Instant Pot)
This was a hack I didn’t know I needed. I have avoided so many things with boiled eggs because shelling them was such an awful chore for me. My fingers are clumsy, I guess, because I would always tear the outsides of the boiled eggs to pieces! I’ve tried adding all the things to the boiling water, allowing the eggs to sit, using cold water before peeling and nah. My solution would be to ask anyone else to bring the deviled eggs. Imagine my surprise at finding I could boil eggs, and make a ‘deconstructed’ deviled egg salad! It’s not nearly as beautiful in presentation, but it does taste just as delicious.
Here’s what I do:
Take an Instant Pot, a trivet for the Instant Pot liner, and an oven safe dish that will fit inside the Instant Pot liner. Also, get some cooking spray or oil, eggs, and some water.
Add 2 cups of water to the bottom of the liner, and place the trivet in the bottom of the Instant Pot liner. Spray the oven safe dish with oil, and crack 8-10 eggs into the dish. Place the dish in the Instant pot, on the trivet, inside the liner. (This batch of eggs had a lot of double yolks!)
Set the valve to sealing, then set for pressure cook 6 minutes. After cooking, let sit an additional 2 minutes, then move valve to venting and allow pressure to release more quickly. If the eggs are not fully set, just leave in the pot to finish cooking in the residual heat.
Turn the eggs out onto a cutting board. If there is oil on top, you can pat it off with a paper towel.
Chop up the eggs and use as desired. Egg salad, tuna salad, potato salad…or just as a salad topper!
Egg Loaf in the Instant Pot
Equipment
- Instant Pot
- 6-7" metal pan or oven safe dish
- metal trivet/rack with handles
Ingredients
- cooking spray or oil to grease egg dish
- 2 cups water
- 8-10 eggs
Instructions
- Add water to the instant pot liner, and place trivet on the bottom.
- Spray the oven safe dish with nonstick cooking spray.
- Crack eggs into the oven safe dish.
- Set the dish on the trivet.
- Close the lid and set the valve to the sealing position.
- Press the Pressure Cook/Manual button for 6 minutes for a 6" pan. If they don't fully cook in the time given, just put them back in the pot and let the finish cooking in the residual heat.
- When the cooking cycle has finished, let the pot sit for 2 minutes. Then turn the valve to the venting position to quick release the remaining pressure.
- Open the lid when pressure is vented.
- Use oven mitts to carefully lift the dish out of the Instant Pot.
- Invert the dish onto a cutting board to remove the egg loaf and let it cool.
- Chop the egg loaf into desired size and use in egg salad, tuna salad or other recipes that call for boiled eggs.
